Cooking for our husbands 101



You know how it is cooking the same old recipes over and over and what a mundane chore that can become. Night after night trying to come up with something creative, good tasting as well as good for you. Well... we've been saved by Donna Hay. One of our Island Girls (Nisa) let us borrow a Donna Hay magazine a couple months back and our kitchens haven't been the same since. We recently picked up her latest cookbook "The Instant Cook" which is fabulous. Not only are the recipes easy & fast, it's almost like we're back in France every night eating simply & abundantly. The other nice thing about her recipes is that she gives you three variations. For example last night we made Grilled Chicken & Vegetable Stacks on the BB-Q (delicious). Variations: replace the chicken with beef or make it with pork and apple. Our favorite so far and so EASY to make is:

Baked Italian Chicken with Tomatoes
6 Roma tomatoes, halved
3 teaspoons olive oil
sea salt and cracked black pepper
3 tablespoons store-bought pesto
4 chicken breast fillets
8 slices Parmesan cheese
12 slices prosciutto

Preheat the oven to 390 degrees. Place tomatoes, cut side up, in a baking dish lined with baking paper, drizzle with the oil and sprinkle with the salt and pepper. Bake for 20 minutes. Spread the pesto over the chicken breasts, top with the Parmesan and the wrap each in prosciutto. Place the chicken in the baking dish with the tomatoes and bake for 10-15 minutes or until the chicken is cooked through. Serve hot or cold with a simple greed salad.
